Mexican Summer Salad

Ingredients
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cucumber, diced
- 1/2 salad onion, finely chopped
- 1/2 cup corn cornels
- 1/3 bunch cilantro, roughly chopped
Dressing:
- 1/3 cup extra virgin olive oil
- 1/3 cup our Yarra Valley Hilltop Lime Juice
- Freshly ground salt & pepper to taste
Methods
- Whisk together all dressing ingredients in a small bowl and set aside
- Combine all chopped salad ingredients in a large salad bowl
- Drizzle dressing over salad, and toss together to enjoy.
