Method
- Combine milk, flour, egg whites, egg, honey, vegetable oil, and salt in a food processor until a smooth batter is made.
- To cook crepes, lightly spray saucepan with non-stick cooking spray and place over medium-high heat. Pour 1/4 cup batter into saucepan and rotate to evenly cover base. Cook until edges begin to brown, before flipping and cooking until crepe is lightly browned. Remove crepe from pan and repeat this step for entire batter.
- In a saucepan, caramelise the sugar and then add port wine, stirring briefly. Add cherries and lemon juice, and then simmer over low heat until cherries soften and liquid begins to thicken.
- Remove from heat, and drizzle over crepes to serve.
